September’s Dinner: Pasta Shrimp Stir Fry TASTY – This meal tastes AMAZING, any one of these items by themselves may not taste incredible, but the combination of flavors here is awesome, you will love it! I just finished eating this as a left-over meal, it’s great to come home from work tired and have a healthy, tasty meal that can be heated up in 2 minutes. SIMPLE Ingredients: Shrimp (pre-cooked or raw), tomatoe-based sauce of your choice (onion mushroom used in video), whole-wheat pasta of your choice (rotini used in video), 1/2 large yellow onion, 1 yellow squash, 2 green zucchini, 3-5 tbsp extra virgin olive oil. QUICK – est. Cooking Time: 20-28 mins HEALTHY Rating (5 out of 5) – this meal is top-notch. Pasta sauce is the only thing that would be high sodium but it is spread out across several meals and watered down in the cooking process. www.ChefBinks.com Saute Chicken breast with Sour Cream Dijon sauce made by Dr. Derek Alessi and Chef Binks. Healthy Living. Serves 4 Cook Time: 30 Minutes Shopping list: 2- 6 oz boneless skinless chicken breasts 1 T olive oil ½ Cup white wine 1/2 cup light sour cream 1/2 cup spicy or Dijon mustard Recipe: 1.Sauté chicken breasts in a skillet with olive oil until golden brown. 2.Add white wine and cover (make sure the heat is reduced and you cover immediately or the wine can explosively react with the oil. Remove some of the oil if you end up with to much of it in the pan BEFORE you add the wine. 3.Cook on medium heat until chicken is 165 F, turning chicken every 5 min. 4.Mix light sour cream and mustard together and cover over cooked chicken breasts. 5.Cover and warm on very low heat for 10 min until sauce is warm. 6.Thin sauce with a dash of water if it gets to thick on you.

Shrimp is cooked in a savory sauce and served over angel hair pasta for a delicious seafood treat. Ingredients: 1 ½ to 2 tablespoons sliced green onion ¾ to 1 teaspoon grated lemon rind 1 ½ tablespoons fresh lemon juice ¼ teaspoon salt 2 cloves garlic, minced 1/3 cup butter, melted ¾ pound peeled and deveined uncooked shrimp 2 tablespoons minced fresh parsley ¼ teaspoon hot sauce 4 to 8 oz. angel hair pasta, cooked and hot (I made about 8 oz., which was twice as much pasta as this recipe needed. You can use your own judgment about the amount of pasta. The shrimp will make roughly 2 servings.) lemon slices and fresh sprigs of parsley for garnish In a large skillet, combine 1 ½ to 2 tablespoons sliced green onion, ¾ to 1 teaspoon grated lemon rind, 1 ½ tablespoons fresh lemon juice, ¼ teaspoon salt, 2 cloves minced garlic, and 1/3 cup melted butter. Cook over medium-high heat, stirring constantly, until mixture is hot and bubbly. Reduce the heat to medium and add ¾ pound peeled and deveined shrimp. Cook, stirring constantly, 5 minutes, or until shrimp turns pink. Add 2 tablespoons minced fresh parsley and ¼ teaspoon hot sauce. Toss gently. Serve over 4 to 8 oz. hot, cooked angel hair pasta. Chicken is a great with this meal as well as fish! :) I made sausages because my fiance’ Justin loves sausages. Hehehe! ❤ I’ve owned my George Foreman grill for years and grill veggies, seafood and meats. It removes excess oil from your food!
