Also called “chicken cacciatora”: famous in Italian restaurants all over the world and here in its original Milanese form from GialloZafferano; Italy’s most famous food website.The chicken hunter’s style (or chicken “cacciatora”) is a traditional Tuscan dish, which is wide known and appreciated in Italy, above all in the northern regions. This recipe is really easy to prepare and very tasty , thanks to the use of savory ingredients, such as onions, tomatoes and red wine which bring out the chicken flavour. The origins of this recipe go back still once to the humble people’s world, who could eat and cook just what they had at their disposal. For this reason, during the feast days the chicken (and above all the hen) kept by peasants used to become a lavish meal enhanced by the home-grown vegetables and the nouveau red wine. Begin by gutting the chicken and cutting it into pieces (1), leaving the skin on to give more flavour to the recipe. Heat the oil in a non-stick pan and brown the pieces of chicken on both sides for about 10 minutes until golden brown (2). At this point add the finely chopped onion and the garlic, the chopped celery and the carrots (3), a pinch of salt, the pepper and the rosemary, and brown everything for at least 5 minutes more. Once well coloured, pour the red wine onto the chicken (5) and let it evaporate. Then add the tomatoes (6), cover with a lid and let it simmer on a medium flame (7) for at least 30 minutes (or until the chicken is well cooked

Nigella Lawson – Comfort Foods Sept. 27: Nigella Lawson serves up some comfort food, including Spaghetti alla Carbonara, with “Today” show host Matt Lauer. 060927 Ingredients * 1 pound spaghetti * 2 cups cubed pancetta rind removed * 2 teaspoons olive oil * 1/4 cup dry white wine or vermouth * 4 eggs * 1/2 cup freshly grated Parmesan * 1/4 cup heavy cream * Freshly ground black pepper * Freshly ground nutmeg Directions Put a large pan of water on to boil for the pasta. In another large pan that will fit the pasta later, cook the pancetta cubes in the oil until crispy but not crunchy. Pour over the white wine or vermouth and let it bubble away so that, after a few minutes, you have a small amount of salty winey syrup left. Take the pan off the heat. In a bowl, beat together the eggs, Parmesan, cream, and pepper. Cook the pasta according to the packet instructions, but since you want it kept al dente start checking it 2 minutes before end of the recommended cooking time. When the pasta is done, remove approximately 1/2 cup of the pasta water before draining. Put the pan with the bacon cubes back on the heat and add the drained pasta, tossing well to coat with the syrupy pancetta. Take the pan off the heat again and add the eggs and cheese mixture, swiftly tossing everything to mix. Thin with pasta water, if needed. Grind over some more pepper and grate over the nutmeg to serve. Sticky Toffee Sauce Nigella Lawson INGREDIENTS • 3/4 cups plus 1 tablespoon soft dark brown sugar
