Salmon with Hollandaise Sauce

Ingredients Skinned and de-boned fresh salmon Poaching Liquor 1 stick of celery 1 small carrot fresh parsley stalks 2/3 bay leaves half a bottle dry white wine Hollandaise Sauce 2 egg yolks 30mls white wine vinegar a good pinch ground black pepper 200mls unsalted clarified butter serve with freshly cooked asparagus tips

CUMIN CHICKEN 2 tbsp Ching’s Secret All In One Sauce 1 tsp Ching’s Secret Soy Sauce 200 gm sliced chicken 2 tbsp oil 2 tbsp ginger 1 tbsp of white wine 1 tsp roasted cumin seeds Chili flakes to garnish Salt and pepper to taste Method: Take 2 tbsp oil in a frying pan, gently place the chicken pieces in the oil and cook, add all the sauces and ginger and cook till done. Cook This Ep 7: Mussels in Spicy Tomato Sauce with Rouille

Serve 4 – 2 tablesp Olive Oil – 6 cloves garlic, chopped – 1 med red chilli, sliced – 1 can crushed tomatoes – 1 cup white wine – 1 kg Black Mussels, de-bearded – 20 basil leaves, roughly torn – sea salt & cracked black pepper Method: Heat the oil in a wok until almost smoking; add the garlic and chilli, sauté for a minute. Add in the tomatoes and white wine, reduce heat and simmer for 3-4 minutes. Place the mussels into the tomato sauce; cover and cook for 2 minutes or till mussels are open. Season with salt and pepper, sprinkle with the basil leaves. Serve with crusty bread and rouille. Rouille – a red, mayonnaise-like sauce which is a specialty of Provence, France. Keep covered in the fridge for 3-4 days. To make the rouille: – 1 roasted red capsicum – 1 potato, peeled, boiled, diced – 2 garlic cloves, chopped – 1 egg yolk – ½ cup olive oil Place the capsicum, potato, garlic and egg yolk in a food processor and season with salt and pepper. Process to combine, then add the oil in a thin steady stream until a smooth emulsion. This recipe is best with a fish that’s meat becomes firm when cooked. That way your fish stays together in the sauce. Ingredients: – 1-1.5 kilos of fresh fish (Sororoca in this video) – 100-200 grams of fresh shrimp – 2-3 garlic cloves – 1 small onion – a splash of white wine – 2-3 cups fish stock – 1 cup heavy whipping cream – 2-3 teaspoons of capers – lime juice, salt & pepper to taste – a few drops of tabasco (optional) Feel free to make requests or suggestions. PERFECT PAIRINGS – EPISODE 1 – MYTH: White Wine Always Goes With Fish

Perhaps one of the most common wine “rules” is “always pair white wine with fish.” During a visit to the Italian seaside town of Livorno for my show on PBS, Avec Eric, I ate the area’s classic fisherman’s stew called “cacciuco,” which is a seafood stew made with a red wine sauce. While the white wine that I drank with the stew was nice, I started wondering about which red wines I might choose to drink with a fish dish that has a rich sauce. Back in New York, Aldo and I did some tasting with a halibut in morel sauce paired with two different pinot noir wines. The results are delicious and interesting and made me excited to do some more exploration in dispelling some of the “wine rules” that are so common. aveceric.com http twitter.com
